Hungarian goulash

This version doesn't have meat, obviously.
Ingredients
- onion, finely chopped (1)
- red bell peppers, chopped (2)
- garlic cloves, minced (6)
- vegetable broth (850ml)
- non-smoked paprike (3-5 tablespoons)
- red wine (70ml)
- potatoes, cut into 1/2-inch chunks (560g)
- tomatoes, diced (400g / 1 can)
- black pepper (1/2 tsp)
- salt (1 tsp)
- rice, maybe?
Instructions
- Chop veg.
- Put on rice.
- Add onion, peppers, garlic, 280ml broth, 1/2 tsp salt to a large pot on medium heat.
- Once water starts to bubble, let cook for 8 more mins until the veg is tender and the broth is gone.
- Add paprika & wine, cook for 3 mins.
- Add potatoes, tomatoes, pepper, 1/2 tsp salt and remaining broth.
- Bring to boil, turn heat to medium-low.
- Cook 15-20 minutes until the potatoes are tender.
